A quick explanation of what to expect:
SASHIMI
Sashimi. Delicate slices of raw seafood
Tataki. We very briefly sear the seafood sealing in all the flavour
Shiozuke. Our home cured salmon. The Western equivalent is Gravlax
SUSHI
All sushi uses a vinegared rice prepared to the chef's own (secret) recipe. The rice will form a base for a cooked or uncooked topping. More typically the rice will be rolled around a filling. In the case of rolled sushi we also use Nori (dried seaweed with a slightly nutty taste) to hold everything together.
Hosomaki Sushi. Bite sized slices of rolled sushi with a range of cooked and uncooked ingredients. We use a great selection of fish, chicken (free range), meat (locally sourced) and veggie fillings to suit every taste.
Futomaki Sushi. Bigger versions of rolled Sushi.
Nigiri Sushi. Bite sized blocks of sushi rice topped with a choice selection of seafood and other goodies
